This was my first attempt with this cut. the meat arrived in 2 days well packed in a cool box. It was the complete tenderloin and looked great. The advise from Andy was to sear it for 2 mins (had to flatten it a bit) and then in the oven at 55 for 10 mins. My companion foolishly thought this was not long enough and I ended up cooking it past medium which is a mistake I will not make again. it cooks much quicker than a steak. The venison was delicious, a nice bottle of Pinot Noir washed it down well.
Although I haven’t tried the sausages yet, the delivery and packaging were first class and I definitely will be buying again.
Throughout the pandemic I have order from Mac and wild and not once has the company disappointed.
